We are grateful for her generosity and for being a great steward of our HEE community. Thank you Mrs. Moo for helping to set an admirable example of how our HEE community is run. Thank you to our other heavy hitters in the land of HEE  for your acts of generosity and kindness as well!  We truly are thankful to be blessed with such a wonderful HEE community.
Eden Echo:   Thank you for agreeing to be our featured artist this month.  Please tell us a little bit about yourself.

Mrs. Moo: I’m Mrs. Moo, my stable name on HEE is Mrs. Moo's Tea Shop. I have been on HEE since 2016 but I took a small break for awhile. The big thing I noticed when I was playing a few years ago was that there weren't many people open to helping out others and explaining the game down to the deep details. Which is what most players need when they first start out because it's confusing. But since I've been back, I've noticed a lot of change in people helping out others. I'm in no way taking credit for this, but I've noticed an increase in people's generosity with giveaways and clubs in the past year or so. Things like Whizbar's Wishlist and Adopt a Newbie make me smile. I rejoined the game to help others out as much as I can and to make sure people are having fun!

EE: How did you get interested in art?

MOO: It's so much fun to create things. To make a whole world out of a piece of paper and pen. I love to imagine myself as the characters I draw, or in the scenes I paint. I live a lot of lives through my art. It's my escape from reality at times. I also did art therapy as a teenager. So my art has a lot of emotion behind it. I learned to feel through my art.

EE: How long have you been an artist?  

MOO: I have been doing traditional art since I could hold a pencil. I inherited artistic talent from my parents. Digital art has only been in my life for a year. Mr. Moo got me interested in doing digital art.

EE: Was there something or someone special in your life that inspired you to become an artist?

MOO: My mother was a huge inspiration for me to become the artist I am today. I loved watching her paint as I was growing up. She worked with oils on wood.
Another inspiration of mine came from Beatrix Potter, an author/illustrator from the 1900s. My parents read her stories to me when I was a child. I always loved the idea of animals living their own little lives in a world similar to that of humans.

EE: Do you specialize in a specific art form?

MOO: On HEE, hand drawn digital art. In traditional art, my specialty is oil paint and acrylic.

EE:   Do you do more than one type of art (pottery, sculpture, pen & ink, sketching, poetry, jewelry etc)? Can you show us some samples if you do?

MOO: I'm able to have fun in any medium. But if I could say which is my second best medium to work with, I'd say pen scribbling or story writing.

EE:    What program do you use for your creations? What is your favorite feature about that program? What do you dislike the most about that program?

MOO: I use MediBang Paint on my phone with my finger as a stylus. I love the layout, it's very customizable and comfortable. I dislike that there doesn't seem to be many brushes available on the app. I was told Procreate had more features, so I might try that one out

EE:  How long do you typically spend on your creations?

MOO:   I spend about 1-2 hours on each character I draw. If the character is more complex or needs more than 3 layers of colour it will take longer.

EE:  Why do you enjoy being an artist?

MOO:  I enjoy being able to create anything I want. And always learning new techniques and mediums. There are endless possibilities with art. There's always something new to explore and create.

EE:  What do you like the least about being an artist? 

MOO: Being an artist, you are often very critical of your work. I don't know how many times I have had to ask Mr.Moo to talk me out of trashing art I made just because there was one "mistake" on it. I usually end my art with "I never want to look at it ever again" and then when I see it days, months, years later, I say "what, that's amazing, how did I hate that?".

Three examples of Moo's pen scribbles.EE:  Do you have a creative process routine or ritual? Do you have to listen to  certain music or eat a certain food?

MOO:  I have a playlist I will listen to when I draw. I find inspiration often from songs on that playlist and I can make a story from them.

EE:  Have you competed in the art Rumble? What did you find the hardest about it? How did it challenge you the most? Would you enter again?

MOO:  I tried to compete in the last rumble. But I didn't have the time to complete my art. So I dropped out of the rumble once I knew I would be too busy to finish it in time. I would like to try and enter again, I really would. But I'm a very busy person that's hardly home, so I don't have access to my PC most days.

EE:  What was the best piece of artistic advice you have ever been given?

MOO:  You are your worst critic. So don't be hard on yourself if you can't make your art look exactly like you see it in your head.

EE:  What is the best advice you would give to other artists?

MOO: Everyone has their own style. Don't compare yourself to others, because everyone does art differently. Don't say to yourself "I'll be happy with my art when it looks exactly like theirs". That will just bring you a whole lot of misery and disappointment. Be happy with what you do. The important part is to enjoy your art. If your art comes to a point where you are not enjoying it, then you should take a step back and think about how you are viewing yourself as an artist. Do what you are comfortable doing.

MOO:  For traditional art, I'm most proud of this pen scribble I did recently. I have been trying to get back into the swing of things with my traditional art and so I've just been doing a lot of pen scribbles. Scribbles are less personal, so I am okay sharing this with you guys. I'm proud of it because of the humor. It was heavily influenced by how much Murdoch Mysteries episodes I watched one night.

As for digital art, I'm most proud of this custom order I did for a player on HEE. It was so much fun to draw out the wolf character because I really enjoy drawing OCs and bringing them to life for the person who created their story. I appreciate people who role-play with characters that they create because that's how I am inside. The excitement of seeing someone else's world come to life is what made this order so much fun.

EE: Where do you see art in your future? Do want to do it for a career or just as a hobby?

MOO:  I'd do art as a career if it paid enough. Unfortunately, it's not enough to be living on. So it's just a hobby for me.

EE:  Have you considered maybe doing a children’s book with your characters?

MOO:   I've thought of it, but I just don't have it in me to do it. My mental illness weighs down most of my productive days.

EE:  What is one thing people love about you?

MOO:  People always tell me I'm a very caring person.

EE:  What do you love about yourself?

MOO:  I love that I am comfortable with my own body and can be happy with myself now that I've learned to love myself. It took years for me to get out of that thinking that I was complete trash and no one could love me. I'm at peace with myself now.
  
EE:  What would you change about yourself?

MOO:  I'd give myself a fresh new mind free of mental illness.

MOO:
I don't have a photo manipulation shop anymore, but I have my hand drawn art shop.
It's called Friends at the Tea Shop. I draw anthropomorphic animals in clothing sitting at tables sipping tea.

EE: Tell me about the Mrs. Moo's Tea Shop.

MOO: The Tea Shop started when I stopped doing photo manipulations. It was much more convenient for me to draw on my phone to maintain an art shop than to do photo manipulations every once in awhile when I had the time and energy to sit down at my PC. I have been improving my hand drawn digital art as I go about using the apps. My first tea shop friends were very sweet and simple. I hardly did any detail work or shading because I wasn't confident in my digital painting at the time.

MOO:  Sadly, I don't. Me and Mr.Moo are transitioning into living out of a mobile home, so I would not have the room to cart around a horse as much as I wish I did. If I had a horse, I'd love a quarter horse. My uncle had the sweetest mare when I was growing up, she was a chestnut quarter horse called "Charm". I was looking into adopting a horse a few years ago but decided against it as me and Mr.Moo made our plans for the future. I didn't want to end up having to leave the horse behind.

EE:  How did you end up playing HEE? Did you just stumble upon or were you referred by somebody or something else?

MOO:  In my disappointment of not being able to adopt a horse, I resorted to pixel horses on a screen. I searched for a horse game to play and found HEE.

EE:  What do you breed for in HEE?

MOO:  I breed for patterned PPP mares for showing and selling. I have a side project for breeding dun tobiano thoroughbreds too. I recently started up frame overo Irish draughts as well.

EE:  Do you have a specialty?

MOO:  I specialize in thoroughbreds and sport ponies with tobiano pattern. I just recently made it on the sport pony breeders leaderboard last year(145). I'm hoping to get on the warmblood leaderboard, because that is my heart breed on HEE.

EE: Who is your favorite LB stallion and why?

MOO:  It'd have to be Brinley Magic Hat. He was one of the stallions that was on the leaderboards when I first joined the game. I even had one of his sons, he was PEE rated I think. So thinking of that stallion makes me remember the good memories I had when I first joined the game.
EE: Tell us about Mr. Moo.
  
MOO:  Mr. Moo is a great person. We met about a year after I first joined HEE. He joined the game shortly afterward, to make fun of me for playing the game. He didn't like that I spent a lot of time on the game. But then he realized he liked playing the game. So we both teamed up to help people out with learning how to show. Mr.Moo is my favorite human on this planet. We're getting married soon!

EE:  Is Mr. Moo artistic as well?

MOO:  He is very artistic. We do art together a lot. He works the best with sculpting clay and paint.

EE:  Do you have any other hobbies or activities you enjoy outside of HEE?

MOO:  I enjoy journaling and story writing. I've been writing in my journals almost every day of my adult life. I would have had the teenager chronicles in journals as well, had I not had a fascination that caused me to light everything on fire when I was a teenager. I have journals that date back to 2014 and a few pages of 2012.

EE: Tell me 5 things about you that I have not already asked about that you would like the readers to know.

MOO:
  1. I'm not actually a cow, I just pretend to be. I have a cow onesie that I wear out when the weather is cold. Mr.Moo has one too.
  2. I absolutely love sushi. I would go into debt eating sushi if Mr.Moo wasn't my voice of reason.
  3. My art is in a museum. Please don't ask which one, I'm not even sure myself. I just saw it in the local news one day. And it wasn't even my best work!! I'm so mad.
  4. I dressed in full gown and gloves with 10 inch heels and a mask to go see the live performance Phantom of the Opera. It was one of the most memorable experiences of my life.
  5. Sometimes, I like to sit in the dead of the night when it's quiet and pretend I'm Lana Del Rey on a stage singing music. I'm sure many ghost stories have been started by me singing in the dead of night.

EE:  If you won the lottery today… what would you do with it?

MOO:  I'd most likely put all the money in a bag and put it on someone's doorstep. I don't define my happiness by how much money I have. And having lots of money has always caused problems for me. Leading a simple life is much easier than leading a life of wealth. Having that money doesn't interest me at all.  ~SCF~

Stirrup Suspense StoriesMystery at GreenhollowA FirstLightFarm featured story~Chapter 5~

It was October at its worst, cold and damp with dark gray clouds that pressed close to the ground. It was the sort of day that made it hard to believe the sun would ever shine again.
It was the perfect day for a funeral.
Emma had been unsure whether she should go or not. She hadn’t known Herrington in any close capacity, but that morning, Red had shown up in the kitchen with a black jacket on, and so she’d dug the clothes she’d worn to Catherine’s funeral up out of the closet and followed him out into the miserably cold morning and driven with him to the local cemetery.
There were more people than she’d been expecting. Horse people, mostly. Farm owners and feed store workers and a few riders. There was family, too, a wife with two small children clinging to her hands, and an elderly woman that may have been Herrington’s mother. It was this woman that Red went to, and Emma followed, mostly because she didn’t know where else to go. The funeral hadn’t quite started yet; there was a tent, and a dug grave, but no hearse had arrived.
“I’m sorry for your loss,” Red said somberly.
“Redford,” she said warmly, and hugged him. “Thank you for coming. I was so sorry to hear about your grandmother.”
She’d known Catherine? Emma looked at the woman closer and found her vaguely familiar. Maybe she’d seen her around the farm before? “Thank you, Vivian,” Red said., with a pointed glance at Emma. It didn’t escape her that he’d thrown her the woman’s name. “It’s been difficult. We’ve still got no leads.”
“Maybe my son’s death will help open up some leads,” she said, and then turned to Emma. “Catherine spoke quite fondly of you, dear. I’m sorry we’re meeting under such sad circumstances.”
“Me too,” Emma managed. “I never realized you two were close friends.”
“Well, we met because of this fella here. Herrington is the one who bred Grimm, did you not know?”
Grimm? That had been Red’s old horse, Emma knew that much. He’d been at Greenhollow right when she’d started working, a massive dark horse with a regal bearing. She’d only known him a few days before he’d been shipped off to the barn Red had been at, and when the accident had happened and Red had come home, Grimm had not come with. Emma had never asked where the horse was now. She didn’t want to pry. She looked for a way to change the subject, and found one quite easily.
“Oh, there’s Hannah,” she said, and didn’t miss the relieved expression that crossed Red’s face as the other girl approached. She was dressed similarly to Emma, in a dark dress that may have been black or navy, her hair tied back and eyes solemn. “I didn’t know you were coming.”
“I boarded with Herrington for a few years,” Hannah said, and turned and kissed Vivian on the cheek. The old woman suddenly looked stiff, and Emma unexpectedly found herself biting back a smile. Spartan had clearly left his impression on her. “I am so, so sorry about your son.”
“Thank you, dear,” Vivian said, and patted her on the hand. “If you don’t mind, the funeral is about to start.”
The hearse had rolled in, and Emma realized that the cemetery had gone quiet and still. Everybody stared somberly at it as the pallbearers approached, bearing the coffin on lifted hands. It was nothing like Catherine’s funeral, which while devastating, had been a brighter affair. When the talking had ceased, birdsong had risen to fill the space. Now there was nothing but the cold trickle of rain.
Red dropped his jacket onto Emma’s shoulders. “You’re shivering,” he said softly, as the priest began to speak. “We don’t have to stay long.”
“Are you heading back to Greenhollow after?” Hannah asked, voice lowered so that the rest of the congregation wouldn’t overhead. “I may stop and check on Spartan.”
Emma just nodded and pulled the jacket tighter around her. It smelled like the rest of the day, damp and hopeless, and it wasn’t very warm, though Red’s gesture was sweet. She couldn’t dwell on that, though, because Herrington’s wife was crying. There had been no answers for the murder of her husband, just as there had been none for the murder of Catherine.
She wondered if there would ever be.
“Do you ever compete?”
The cold, gray October had given way to a glorious sweep of November. Bright blue skies, crisp air, and a stunning red and yellow vista of the mountains around them had finally tempted Emma out onto a trail ride with Hannah. It wasn’t terrible. Spartan was frisky, haunches tucked and constantly trying to spin or buck, but Hannah kept his head pinned to his chest and didn’t seem tired by the efforts of staying on. Willow walked besides him docilely, ears pricked and interested in the scenery.
“I used to,” Emma admitted, and patted her mare. “We were going to try for prelim this year. But with all the chaos, I haven’t had the time to train her, and I don’t know how I’d be able to leave the farm for a weekend.”
“Couldn’t Red watch the farm?”
“I don’t know if it’d be fair to ask him.”

They rode in silence for a while; this was mostly because Spartan had spooked at a leaf, and Hannah was busy surviving. Once she’d settled him, she remarked, “it must be weird, inheriting his grandmother’s farm.”
“I thought it would be,” Emma admitted. “At first, it was. But he seems okay with it. He really doesn’t want to ever ride again. Catherine respected that, I guess.”
“It’s a shame. He really was such a talented rider.”
“Did you ride with him? He said he recognized Spartan, but I thought that was just from shows.” It hit Emma, how unfair it really was, that they’d been off competing while she’d been working to afford her and Willow’s rent. Willow tossed her head, as though agreeing, and Emma realized she’d tightened the reins. She forced herself to relax.
“No, just from shows. He was always beating me. Not that it was hard.” Hannah pushed her hands forwards to gesture at Spartan, and the gelding darted right. She straightened him. “I don’t know why I bother with this horse, sometimes.”
It was the first time Hannah had ever admitted that Spartan was less than perfect, and Emma raised her eyebrows. “Then why do you?”
“He was a gift from my mother. The last one I had before she died.” Hannah sighed. “I couldn’t live with myself if anything happened to him, so. I keep him.”
“I’m sorry about your mother,” Emma said. She was. This was the first time she and Hannah had really talked before, and she’d never realized that Spartan meant so much to her. She felt herself softening towards him, just a little bit. Willow sighed. They’d crested the hill, so that Greenhollow was beneath them again, the same ride she’d taken her on all those weeks ago. There were no deer in sight this time, however. It was just gloriously autumn.
“It happens,” Hannah said, and then rose in her stirrups. “Want to race?”
Spartan was fighting fit, a full hand taller than Willow, and eager to gallop. Willow was steady and content beneath Emma, her gaze soft on the horizon below. The grass was an endless, inviting stretch ahead.
“Why not?” Emma asked, and shortened her reins.
The horses burst into a gallop, Spartan immediately taking the lead. Emma didn’t mind. She bent low into Willow’s neck, and let the speed take her away. It had been a long month. Herrington’s funeral had only been the start of it. Red had shut down again, with finals coming up, and the holiday season loomed ahead, something Emma never could manage to look forward to. She wasn’t sure what the rest of the year had in store for her.
Willow sped up suddenly, and the world snapped into focus between her ears. It was all gold and red and rolling hills, and Spartan galloping alongside them, and then behind them. Emma laughed into the wind. This was why running the farm was worth it. For this little wonderful horse.
They would compete next year. Somehow, someway, she would make it happen.

1 loaf crusty french bread cut into small cubes (about 6-8 cups), DRIED
1 8x8 pan cornbread cut into small cubes (about 6-8 cups), DRIED
1/2 cup butter
1 medium onion, chopped
4 pieces celery, chopped
4-5 cups low-sodium chicken broth (or just use less salt)
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1 Tablespoon fresh rosemary, chopped
1/2 cup fresh parsley leaves, chopped
salt and freshly ground black pepper

Instructions
**To dry your cornbread and bread cubes: Spread them onto large baking sheets and leave them to dry out for 1-2 days. If you're in a hurry you can dry it out in the oven at 250 degrees F for about 30-45 minutes, tossing every 10 minutes or so, until the bread is dry and stale**
Preheat oven to 350 degrees F.
Add the butter to a large skillet over medium heat. Once the butter has melted add the onion and celery and cook for a few minutes until softened.
Add basil, thyme, rosemary, fresh parsley, and chicken broth and bring to a simmer.
Add the dried bread cubes to a large bowl. Slowly pour the broth mixture onto the bread, tossing lightly as you go.
Gradually add more broth mixture, just until everything is evenly moistened. (You don't want to add too much broth or it will be mushy). Taste it and add more herbs or salt, if needed.
Layer mixture into a 9x13 inch baking dish and bake at 350 degrees F for 20 to 25 minutes, or until golden brown on top.

Paradox's            Chicken n' ApplesA great recipe to use up some of the wonderful fresh picked autumn apples! ~Paradox ElitesAdobe Free StockIngredients
1 Tablespoon olive oil
1 pound chicken breast, diced into 1 inch pieces
1 teaspoon kosher salt (divided)
1/2 teaspoon black pepper
8 slices thick-cut bacon, chopped
3 cups broccoli florets
1 medium sweet potato, peeled and diced into 1/2 inch pieces
1 medium onion, chopped
2 tart apples, diced
2 cloves of garlic, minced
1/2 teaspoon thyme
1 teaspoon cinnamon
1 cup chicken stock (divided)

Instructions
Heat the olive oil in a large, nonstick pan over medium-high heat. Add the diced chicken, 1/2 teaspoon salt and pepper. Cook until lightly brown and cooked through. Set chicken aside.
Reduce the pan heat to medium-low. Add bacon and cook until crisp and brown. Set aside 1 1/2 Tablespoons of bacon fat. Set bacon aside with the chicken.
Increase the heat back to medium high. Add broccoli, sweet potato, onion and 1/2 teaspoon salt. Cook until the vegetables are crisp yet tender and the onion is translucent, stirring occasionally.
Stir in the apples, garlic, thyme and cinnamon. Cook 1 minute, then pour in 1/2 cup of the chicken stock. Bring to a boil and cook until the stock has evaporated. Add the chicken and remaining 1/2 cup chicken stock. Cook until heated through. Then add the bacon and serve warm.

HEE Genetics Part 2: Dilution Genes

Last month we talked about the genetics behind the four base colors: bay, brown, black, and chestnut. This month we will talk about dilution genes.
HEE has five genes that modify base colors by lightening the pigment in a horse’s coat. These include dun, pearl, silver, champagne, and crème.

Dun is fairly straight forward. It lightens the hairs on the main body and can cause “primitive markings” like dorsal stripes on the back and zebra stripes on the legs. On HEE, a black-based dun is called grullo, a bay-based dun is called a bay dun, a brown-based dun is called brown dun, and a chestnut-based dun is called red dun.

Pearl is unique because it is a recessive gene. For all other dilution and modifier genes on HEE, the allele that causes the effect is the dominant one, represented by a capital letter. With pearl it is the opposite. Prl with a capital “P” indicates no pearl, while prl with a lowercase “p” indicates the presence of pearl. Pearl is hidden except in a few cases. The first example is when a chestnut-based horse (ee) has two copies of pearl (prlprl); this is an apricot. The second example is when a horse of any base has one copy of crème (only one) and one or two copies of pearl. These horses will have “pearl” in the color name. More on this later.

Crème is unique because it is the only gene on HEE that operates by incomplete dominance. For all other genes, the horse’s color is the same regardless of whether it has one or two copies of the dominant allele. With crème, a horse with one copy will have a completely different coat than a horse with two copies. A red base becomes palomino with one copy of crème and cremello with two copies. A black base becomes smokey black with one copy and smokey crème with two copies. A brown base is brown buckskin with one copy and brown crème with two. And finally, a bay base is buckskin with one copy and perlino with two.

Horses with one copy of crème and one or two copies of pearl will be referred to as palomino pearl, smokey black pearl, brown buckskin pearl, or buckskin pearl, depending on whether they have a chestnut, black, brown, or bay base.

On HEE, the silver gene turns the manes of black-, bay-, or brown-based horses into a silver color. It has no effect on chestnut-based horses. Horses with two copies of the crème gene will not have “silver” listed in the color name. For eight of HEE’s nine breeds, as well as the foal images, silver manes and tails actually look silvery grey. For Sport Horses, however, silver manes and tails look white.
The final gene we will discuss today is champagne. The champagne gene adds several new terms to our dictionary. A black-based champagne is classic champagne. A bay-based champagne is amber champagne. A brown-based champagne is sable champagne, and a chestnut-based champagne is gold champagne. Champagne horses have freckles around their muzzles. Whenever you see the words classic, sable, amber, or gold in a color name, that indicates the presence of champagne. But do not confuse gold with golden. There are horses with golden in the name that do not carry champagne.

What are dunskin, dunalino, brown dunskin, and smokey grullo? These are horses with one or two copies of dun and one copy of crème on a bay, chesntnut, brown, or black base, respectively.

Some of these diluted coats have variations that can occur randomly. These include examples such as golden buckskin, golden dunalino, and pale palomino.

Ingredients

butternut squash
3.5 cups butternut (peeled, seeded & chopped into cubes)
1 garlic clove, crushed
30ml olive oil
15ml cinnamon
400g chickpeas, drained and rinsed
½ red onion, thinly sliced
1 large bunch coriander, roughly chopped
Steamed spinach (to serve)
Ground black pepper (to taste)

tahini dressing
1 garlic clove, crushed
45ml tahini paste
Juice of 1 lemon
Prep Time: 10 minutes
Baking Time: 30 minutes
Instructions

1. Preheat the oven to 200C / 400F

2. Toss the squash in the olive oil and season with the crushed garlic and cinnamon. Place in a roasting tin and roast till soft.

4. Meanwhile, rinse and drain the chickpeas and pour the chickpeas into a saucepan with 125ml water. Bring to the boil over a medium heat. Cook to soften slightly and warm through. Bring the water and chickpeas to the boil over a medium heat. Cook to soften slightly and warm through.

5. While the chickpeas are simmering add spinach to a pan with water and wilt for 2-3mins.

6. Drain and set aside the chickpeas.

7. In a large bowl gently toss the butternut squash, chickpeas, wilted spinach, onion and coriander. Add black pepper to season and tahini dressing to taste.

8. In a bowl add the tahini paste, crushed garlic and lemon juice.

9. Use a fork to whisk and mix well and add up to 5 tablespoons of cold water as you go along.

10. Whisk until the consistency of the dressing is somewhere between single and double cream.

→ This serves about six people.

1 2/3 cup all-purpose flour
2ml baking powder
1ml baking soda
2ml salt
115g butter, softened
625ml light brown sugar
185ml buttermilk (can be exchanged for normal milk if necessary)
60ml sour cream
10ml vanilla
2 egg whites
10ml cinnamon

frosting
115g butter, softened
120g cream cheese
500ml powdered sugar
5ml vanilla
15ml cinnamon (to taste)
Prep Time: 25 minutes
Baking Time: 15 minutes
Instructions

1. Preheat the oven to180C / 350C. Line muffin tins with cases.

2. In a mixing bowl, combine flour, baking powder, baking soda, and salt.

3. In another bowl, melt butter and whisk in 1 cup sugar, buttermilk, sour cream, and vanilla. Add the liquid ingredients to the dry and mix until just combined. Set aside.

4. With an electric mixer, beat egg whites until soft peaks form. Fold into the batter until combined.

5. Spoon batter into cupcake liners (I like to use an ice cream scoop). Mix the remaining 1/4 cup sugar and cinnamon together and sprinkle 1/2 teaspoon on the top of the batter. Reserve remaining.

6. Bake for 15-18 minutes until a toothpick comes out clean. (If you are baking mini and regular cupcakes, bake the mini ones first and then the regular.) Leave in tin for a couple minutes until able to remove onto the rack. Cool completely before frosting.

7. In a mixing bowl, beat butter and cream cheese with an electric mixer on medium speed. Add the powdered sugar and cinnamon a little at a time and beat until smooth and creamy. Mix in the vanilla extract.

8. Place frosting in a piping bag fitted with an M1 tip. Swirl frosting on top of each cupcake and then sprinkle the remaining cinnamon sugar mixture on top.

→ This makes around 12 cupcakes, and works well when doubling the recipe.
→ I like adding some cinnamon to the cupcake mixture to add some extra flavour, but it tastes great either way.
